Depends on the driver you have installed:
YAMT will not be disabled as its not a plug-in. (but it will be disabled after the downgrade process until you reinstall enso)
gamesd based drivers (things like PSVita-StorageMgr) will be disabled by simply disabling plugins.

I was bored so i put some skill points in photoshop and made this pretty simple Enso -> PS Vita Logo fade animation:
Theres 3 variations, one with the PSVITA text only, one with PS logo only and one with both.
I'm not sure what went wrong for you so just make sure you did all of this:
1. Rename GIF to boot_animation.gif
2. Cd to the folder with the GIF
3. Run mkanim convert command
4. Copy boot.rcf to ur0:/tai/
But yeah upload your GIF and i'll give it a try if it still doesn't work.

If you downloaded the version m4xw posted on the previous page you have to go into Control Mapping Settings and bind "Pause" to a button because for some reason it's not bound by default anymore.
Textures go inside sd:/switch/ppsspp/config/ppsspp/PSP/TEXTURES/GAME_ID so for the US version of p3p the GAME_ID folder would be ULUS10512
You also have to enable Tools->Developer Tools->Replace Textures in the settings
