Princess Shroob was worse for me. The Dark Star/Bowser is still manageable.

It's pretty easy. Just spam the Bro Pipe or whatever it's called (where you have to remember if Mario is top or bottom) and abuse the star heal items considering you don't need them after the final boss anyway. The pipe deals a ton of damage. The Bowser part is just dodging and using whatever ability you like best (I like the Shy Guys and Koopas myself)
