Are new joycons the same as the ones that come with switch v1?

I was looking for a switch to mod and I found one for a good price, however it’s just a tablet, so I’d have to buy new joycons.

Can I still use my jig with the new joycons to enter RCM mode?

Same joycon, no difference beside color, v1 unpatched still need a jig for the first time until you enable autorcm.

Absolutely, they are identical from hardware to function (Nintendo only - not the 3rd parties one).
Btw, in process of jacking Switch, most of time, you don't event need joycons, they use Vol button, Power button and Touch control for most manipulation
