Recording through Xvid and x264vfw makes the video look too fuzzy, even if I maximize quality settings. If I recorded it uncompressed, I could make it look great through Virtualdub, but if recording full frames uncompressed, it will automatically split the video @ 2gb. I don't want that. Is there any way to stop it from splitting?

You are going to see splitting; the basic AVI format is limited to 2 gigs. Some of the mods to the format (see something like opendml) take more but I would not wish that upon someone that actually is actually making a video editing program, let alone just giving you a nice feature for an emulator.

I am not sure what X264 is doing to drop the quality, though I have not checked out the VFW side of things. However if you want lossless without the size of raw frames then what about the VFW encoder from the ffdshow tryouts ( http://sourceforge.net/projects/ffdshow-tryout/ ), it should have things like Huffyuv you can try.
