1. No, you can't backup blu-ray movie with backup managers.
multiMAN can "mount" an already dump bluray movie (dumped with a bluray reader on computer) and placed on the PS3 internal HDD.
It can then play the movie from the AVCHD item of the "video" menu on the PS3 XMB.
2. you don't need jailbreak dongle anymore.
You can jailbreak and install a custom firmware with any FAT32 USB stick by updating to a modified and signed firmware, as long as you are not past fw3.55
3.56+ can't be hacked yet.
You can follow the softmod guide instead of this old jailbreak guide.
(though, the "and connect to PSN" part is old too)
