I using the swit. I have an autosave outside kara kara basar. I load it. I use cryonis on the water (as the video showed) and stood on it. then load the shrine of ressurection save but nothing happens.
as far as I get it you gotta pause as soon as you're falling or like stand on the very edge..

You have to open the menu on the exact frame you press A to climb down from the edge of the ice block, and from the menu load the save to the shrine, then it should work.

That's a pretty cool glitch.
Doesn't seem like it would make the game more challenging though. You'd just have to rely on land travel, and looking for things manually rather than using the sensor. It would be a pain in the ass, but it would just be time consuming, not difficult.
If you weren't able to use runes at all, that would be different, as you'd be stuck with 7 hearts and no extra stamina for the whole game, and some required parts of the game would be harder without runes. But then you'd have to find a way off the plateau without using the paraglider since that would be unobtainable unless there's some other glitch that allows you to obtain it without completing any shrines.
Some people might consider it challenging to beat the game without using fast travel, but to me it would just be torture running back and forth across the map many times over :P

There are still horses to ride, but yeah, get mundane after a while.

Ha ha, imagine Witcher 3 without fast travel

I find paragliding to be faster (and more fun) than horse travel, I guess if you're just going from A to B it might be better but there's too much stuff to explore making horses get cumbersome very quickly.
