Is there a way to export Skyrim Anniversary Edition with all of the addon content from my sysnand so I can install it on my emunand? Or is there a trick to activating it (if its already installed in the updated base game)?

I'm not sure to fully understand your question. So, my answer may be out of topic.

"All of the addon content" (as you call it) is included in the last game update and that's why it weights ~7.3 gb. Activating it, however, requires to install the "Anniversary upgrade" which basically contains only a simple unlocker weighing just a few kb.

I think DBI offers an option to move some game/update/dlc from the nand (stock or emu) to the SD.

You can also just install the game/update/dlc directly on the SD from the very beginning...
