ROM Hack Question about reverse engineer file format

Until now I've seen some file formats very similar (I don't remember the exact extension, they were files from Lord of Magna and Crimson Shroud), something like a magic word, a couple of integers about the size of the file, parts of the file, etc... a pointer table and then the data.

I've been able to know some of these facts just by making simple operations, guessing and by luck, but I assume this is not the proper method, so I was wondering what kind of tests and things do you guys do to get this kind of info about an unknown file format.

It's curiosity.
Just want to know what kind of steps people do to get info about a file format, nothing serious
