yes, it should be possible to replace anything, except maybe the system menu if you didn't make a proper dump when softmoding the vWii.
Replacing a wrong animated banner (banner brick) with a working one is possible
replacing an IOS (if you installed a Wii IOS instead of vWii IOS) is maybe possible. Not sure how ancast is handled for IOS.
but I think with time and user's curiosity, we will get a way to replace anything.

Now I wanted to get my vWii with SD (128GB SanDisk) to work so I can get rid of my Wii and have everything on one. But the games will not run on Wiiflow, and cfg just freezes at the boot screen, so I have to unplug it that it turns off. Did everything what needed to be done. I am pretty much a noob when it gets down to the ios stuff or cios. So I just followed all the steps. At the end I installed ios80 but here and there I read to use ios236. But what is the difference?

I don´t have to restore the defaults first before folowing those steps? I am just making sure. And if I do need ios236, can I just install it, even when having ios80 on it?
My SD 128GB has the FAT32 format with 64kb cluster. Not sure, but somewhere I read it had to be 32kb to make this work. When I would like to use a different SD, can I copy all the files from it to another SD and use it on MY Haxchi WiiU.

I added support to read the SEEPROM data using code from MINI, but for some weird reason it doesn't work under vWii (a friend of mine already confirmed me this). Well, I guess it doesn't really matter... The Korean Key is publicly available, and the application is still creating a hexdump of the device.cert from the console (that does not fail), which actually contains most, if not all, of the usable information from the SEEPROM.
OTP access works perfectly, according to him.
Some additional info, for those who are interested:
EDIT (12/28/2012): Fixed a very silly bug that prevented the Korean Key to be displayed even it is was read properly from the SEEPROM.
- NG Signature (ng_sig): 60 bytes, located @ offset 0x4 in the device certifcate.
- NG Key ID (ng_key_id): 4 bytes, located @ offset 0x104 in the device certificate.
I also added a small vWii check using ES_GetStoredTMDSize to read the length of the IOS512 TMD. If it fails to retrieve the TMD, it will return a false value and the application will work as it should; otherwise, the SEEPROM access will be disabled and the application will go straight to the OTP keys, instead of displaying that *annoying* error.

I don't want to have to insert an SD card every bloody time I want to load an app via Brawl, that will only wear the SD slot spring out faster. I need a permanent solution to emulation.
