Is there any way (perhaps through homebrew) of swapping the gyro signals of the left and right joycon? Then I could play left-handed (yes, I know this won't match Link's model), with the left joycon controlling the sword, beetle, loftwing &c. and shield with the right.

Not sure if there is remapping for gyro, even though you can remap the buttons, and analog stick.
This is what I have ended up doing - remapping all the buttons and sticks to the opposite joycon. The only caveat is that the right joycon needs to have an A and B button, and if you map them to SL and SR it is possible to press the lower one accidentally when holding the joycon in your left hand. OTOH this means I can sprint by gripping harder, which could be handy as it doesn't need the use of the other joycon so can be combined with camera movement.
