I didn't even know that these existed until the other day when I managed to snag some PSP games that released on 2 UMD. I assume there are probably very few games that did this and I am curious if there is a list anywhere?

I saw this list earlier and it is definitely not complete. I have at least 1 title that is not on the list.
I would assume no. As the list of 2 UMD games is only around ~20 titles.
