Misc Third Party Joy-Con Update Stuck At 0%, How do I stop the update without risking the Joy-Con's Firmware from Corrupting?

Like I said third party doesn't get their update from Nintendo, if you used the system joycon updating method it won't update as they ain't oem.

Guess I'll let them on their current firmware until I REALLY need to update

Have you tried following the manufacturer's website directions on how to update? Obviously, as stated by Hayato213, it wouldn't update while just attached to the Switch console.
