By 'true' Western games, I mean set in the old West with no supernatural elements, no sci-fi and no time travel.

As best as I can tell, there have only been 6 of these on consoles which were any good: 2 Call of Juarez games, 3 Red Dead games and Gun.

Any I've not thought about?

For Call of Juarez, only the 1st and last game (Gunslinger) made in a western setting, the others are somewhat modern. Gunslinger was very linear (compared to the first game), no horses etc. being a digital-only release..
There just isn't that many games that're made like that anyway..

Gun was properly unique.

CoJ The Cartel was an awful game by most accounts and was modern day Mexico.

I don't think it made it to consoles but there was a popular Wild West multiplayer mod for Half Life -- I used to play it as it was one of the few with bots and it did lean somewhat into weapons (albeit everybody with 6 shooters, nice shotguns, probably quick loading and repeating rifles as opposed to sticking with more vintage stuff that might be more interesting to explore).

https://store.steampowered.com/search/?term=wild+west has a few things but are not always for consoles, most of it is the usual Steam junk though (indie games nobody cares about, and a few skins/weapon packs for whatever games vaguely could deal with it).

Desperados III made it to PS4 and xbone, I have not played it though but the earlier entries had some merit and reviews at least don't make me dismiss it.

As the last gasp of western films, TV and such was in the 80s after which it became desperately unfashionable (and what little does get done wears a deconstruction hat loud and proud, the game equivalent being the sci fi/time travel/zombies and ghoulies thing) it also means most games are going to be from around that time as well.
