So my mother is trying to watch a biblic movie about Jesus
The thing is that this movie has been released in 1977
So sound isnt very good, my mom can't hear some parts of it
So, is there a way to up volume even more?

Check to see if your player has a normalise function somewhere in its audio settings. Such things are designed to increase the volume as far as they will go without clipping.

If you can stand a bit of clipping (for old films they tend to have musical stings and audio effects very loud but speech less so) then you can look into increasing volumes beyond what technically should be done. VLC does it by default (usually with the scroll wheel) but others might need to first have an option selected (or removed) which will aim to prevent clipping.

Similarly many people provide subtitles for films of all sorts, and even if it is technically another rip then for the most part it is only going to be a matter of delaying or speeding up subtitles to match the version you have in front of you.

Servers are nice and all but maybe this is one of those things where you make an exception -- we can sit and discuss audio mastering all day if you like but if the issue here is solved by copying a directory from a a share and shoving a laptop with a HDMI lead into the TV...

Your only other option if you absolutely must use the plex server is to use a transcoding program and normalize the volume with that. I know mediacoder has that feature, but only on the paid version. I'm sure there's a freeware or a full-feature trial that can do that also.
