I got two Dell PowerEdge R620s. No, they're not stolen. Just before anybody asks.
What should I do with 'em? I am using one for PfSense. Use the other for Plex, maybe?

oooh specs:
CPU: 2x Sandy Bridge E5-2620 2.0Ghz
RAM: 32GBs
BAY: 8
HDD: 6.8TBs via RAID

Why not try to sell the ones you aren't using? At least you'd have a bit of money from them since you got them free

Host a private servers for your friends or something.
I've been doing something like that for my friends for a long time. [My server fried itself sadly, due to power outage :/]

sell them and pay off some debt or invest in a more energy efficient freezer/washing machine/water heater, tv/monitor, insulate your home, make the switch to led light bulbs, possibly if you have the space, get a real deep freezer and stock it up with meat and other food when its cheap.
sell off the old stuff for even more profit
you'll have those 2000 bucks back in a few years to reinvest

Do you want something which is on 24x7 or as a second system?

I have a small HP G1610T Gen 8 which I use as a 24x7 server for files, video encoding, VOIP, VMs, practice AD, etc.

I would consider looking at ESXi/vsphere if you're just using one for PfSense for now as you may get better use out of the system.

Also, if you are in education, check out dreamspark (got Server 2016 for free).

If you plan on selling, check their value as a whole vs their value as parts. Old bussiness stuff doesn't necessarily go for that much.

Emulation machine! AWESOME EMULATION MACHINE. YOU CAN PLAY ALL OF THEM AT THE SAME TIME!

except PCSX2 which need a huge amount of IPC which the low clocked sandy will never have unfortunately.

SOTC will not even boot on that machine.

not everybody lives in expensive germany (like me) where the energy prices skyrocket every year again. depending on where he lives he certainly won't care for energy efficiency.
