If Dolphin emulation didn't require a very specific build with very specific settings for each and every individual game to work properly on the Nvidia SHIELD, then sure. Otherwise, I would suggest waiting for the Switch 2!

That part of Sunshine ran the same for me on Ubuntu.. The tutorial plays fine. Once you get to the actual hub world, performance drops to ~75% speed max.
That video is useless withough seeing how Delphino Plaza (hub world) runs.
Edit: WTH.. when I opened this page it looked like that video post was just a few posts up. Thought I was on last page when I was on the first
