Also, TX have been promising something for iPatched units (but it's likely just the same warmboot method)
Could go both ways, they still manufacture new Switches in those colors. And after all the JoyCons are separate from the console so those could have been manufactured a long time ago while the console itself is newer. Plus, Nintendo can update the consoles post-production if they so wished.
It just depends on how long the seller (or whoever they bought it from) has had them sitting around in the box. Which is hard to tell without looking at the serial, which you can't really do when buying from eBay.
Second hand also is hit and miss but at least there you can ask the seller for more info to make sure. Most of the time second hand is safe though.
I knew it was patched after testing on 6.0.0, but I was able to re-write the exploit chain using one of my stashed bugs.

They get sold cheap on Facebook all the time. I LITERALLY got one last week for 200 AND it came with a physical copy of Zelda with case. A lot of people have their switches just sitting there collecting dust so they sell them.Good luck finding one of those these days though as they aren't THAT easy to come by

I also think he mentioned he ported it to 6 before anything higher than 6.0.0 existed.I assume this means it will also work on 6.0.1? I am still on 5.1.0 and was wondering if I should update officially to 6.0.1, but still be exactly the same as 5.1.0 and not lose anything??

I think the advertised coldboot is for 4.x and below. I'm not sure there's any benefit to staying on 5.1.0, but I'm not 100% sure the 6.0 port will get released and work with 6.0.1+.

Most of it. It's still doable on 5.0.0+, but it's a lot more complicated now.
