GPU will be a LITTLE on the low side, for sure, but you already have it so I'd recommend holding onto it for the time being. The thing for emulation (not only Wii U but every system) is that it requires a CPU with a good IPC, so intel or ryzen CPUs. You cpu will problably be enough for MK8 and other games but for botw you might not get a constant 30fps.
