2. If you want native Vita hacks alongside PSP mode hacks, get 3.60. Any brand new Vita sans 2 new Japanese Slim colors is guaranteed to have 3.60 or lower out of the box. After that, you can use Henkaku's DNS server to update directly to 3.60 and can run Henkaku on it.
3. There are quite a few, depending on what you want to use. For Adrenaline on 3.60 (which is a full ePSP mode CFW that includes the XMB and other tweaks like new graphical filters)...

1. Really useful, thanks! A few more doubts just to understand how to start pls. I didn't get the part of 'sans 2 new Japanese Slim colors', did it mean that there are a few PS Vita models and they all should have version 3.60 or lower other than 2 models which have Japanese colors in a slim version?
2. And if I get one with version 3.60, I don't need to use that Henkaku's DNS server you mention as the console would be already in firmware 3.60, right?
3. What is the purpose of running Henkaku? ie, is it a different CFW to Adrenaline or ARK, or do you need both to be running in order to use a PSP emulator?

1. I mean there's only 2 models of Vitas which will have 3.61 or higher, which are the ones you don't want. Literally anything else is fine if it's brand new. If it's used, you'll have to check unless it's stated by the seller.

2. You won't need to use the DNS server since it's already at 3.60, but you should add it anyways to avoid accidentally updating for any reason (the Vita will NEVER force you to update on it's own, but sometimes kids happen and they'll do it for you :P)

3. Henkaku is a native Vita exploit, it gives us access to Vita-mode homebrew and backup loading. Adrenaline and ARK are PSP mode CFW, they're CFW for the PSP emulator not the Vita. For 3.60, you'll need to be running Henkaku for Adrenaline on PSP mode. ARK can be run without Henkaku, but only if you use a legitimate PSP game installed from PSN (which, at this time, will require a PS3. If you don't have a PS3, you can just use the ePSP bubble installer which requires Henkaku to run).

You can actually install the bubble through the PSVimgtools and QCMA as long as you sacrifice a psp game/demo for it. No PS3 required.
